Sweet Potato, Black Bean, and Feta Hand Pies



A delightful combination of sweet potatoes, black beans, and feta cheese encased in a flaky pie crust – these hand pies are a perfect portable snack or appetizer.

Ingredients:

  • 2 medium sweet potatoes, diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 sheets of refrigerated pie crust
  • 1 egg, beaten for egg wash

Instructions:

Preheat the oven to 375F 190C

In a large mixing bowl, toss diced sweet potatoes with olive oil, cumin, chili powder, salt, and pepper until evenly coated

Spread the seasoned sweet potatoes on a baking sheet and roast in the preheated oven for 20-25 minutes or until tender, stirring halfway through

In a separate bowl, combine the roasted sweet potatoes, black beans, and crumbled feta cheese

Mix well

Roll out the pie crust on a floured surface and cut into circles about 4-5 inches in diameter

Spoon the sweet potato, black bean, and feta mixture onto one half of each pie crust circle, leaving a small border

Fold the other half of the pie crust over the filling, creating a half-moon shape

Press the edges to seal and use a fork to crimp

Place the hand pies on a baking sheet lined with parchment paper

Brush each hand pie with the beaten egg to give them a golden finish

Bake in the preheated oven for 15-18 minutes or until the crust is golden brown

Allow the hand pies to cool for a few minutes before serving
