Autumn Apple, Quinoa, and Butternut Squash Salad
This Autumn Apple, Quinoa, and Butternut Squash Salad is colorful and full of flavor. It has quinoa, roasted butternut squash, crisp apple slices, and a sweet-and-sour dressing. Great for a healthy and tasty fall meal.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups butternut squash, diced
- 1 apple, cored and sliced
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 2 cups arugula, washed
Instructions:
Cook quinoa according to package instructions
Let it cool
Preheat oven to 400F 200C
Toss butternut squash with olive oil, salt, and pepper
Roast for 20-25 minutes or until tender
In a small bowl, whisk together maple syrup, Dijon mustard, salt, and pepper to make the dressing
In a large bowl, combine cooked quinoa, roasted butternut squash, apple slices, dried cranberries, and chopped pecans
Drizzle the dressing over the salad and toss gently to coat evenly
Serve the salad over a bed of arugula
