Low Carb Rainbow Veggie Wraps

Ingredients:
- 6 large lettuce leaves
- 1 medium cucumber, julienned
- 1 medium red bell pepper, thinly sliced
- 1 medium yellow bell pepper, thinly sliced
- 1 medium orange bell pepper, thinly sliced
- 1 medium carrot, julienned
- 1/2 cup shredded purple cabbage
- 1 avocado, sliced
- 6 slices of turkey breast optional for added protein
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon chili flakes
Instructions:
To make the dressing, mix the chili flakes, garlic powder, lemon juice, Dijon mustard, olive oil, and lemon juice in a small bowl with a whisk
Put away
Place the lettuce leaves on a flat surface
Separate the cucumber strips, bell pepper slices, carrot strips, purple cabbage shreds, avocado slices, and turkey breast slices among the lettuce leaves
Add salt and pepper to taste to the vegetables and turkey
Pour the ready-made dressing over each wrap
Be careful as you roll up each wrap, tucking the sides in as you go
Tack it down with toothpicks if you need to
Put it in the fridge for up to 4 hours before serving, or serve it right away
