Pink Pancakes with Crushed Strawberry Oreos



Strawberry Oreos crushed into these pink pancakes make a sweet and colorful breakfast that's great for a special morning in bed. Adding Oreos and strawberry puree makes them taste even better and look even better.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup strawberry puree
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 6 Strawberry Oreos, crushed
  • Pink food coloring optional
  • Whipped cream optional
  • Fresh strawberries for garnish optional

Instructions:

Put the all-purpose flour, sugar, baking powder, baking soda, and salt in a bowl and mix them together

Mix the egg, melted butter, strawberry puree, and buttermilk in a different bowl using a whisk

If you want your pancakes to be a brighter pink color, mix in a few drops of pink food coloring

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Don't mix it too much; a few lumps are fine

Add the crushed Strawberry Oreos to the pancake batter slowly

Warm up a griddle or nonstick skillet over medium heat and use cooking spray or butter to lightly coat it

For every pancake, put 1/4 cup of pancake batter on the griddle

Once the top starts to bubble, flip it over and cook until the other side is golden brown

Do the same thing with the rest of the batter

If you want, you can top the pink pancakes with fresh strawberries and a dollop of whipped cream
