Ultimate Grilled Veggie Sandwich



A healthy and tasty grilled veggie sandwich with red bell pepper, red onion, portobello mushrooms, and zucchini. It has Swiss cheese, fresh spinach, and sun-dried tomato aioli on top. Great for a filling vegetarian meal.

Ingredients:

  • 2 portobello mushrooms
  • 1 zucchini
  • 1 red bell pepper
  • 1 red onion
  • 4 slices of whole-grain bread
  • 4 slices of Swiss cheese
  • 1/4 cup of balsamic vinegar
  • 2 tablespoons of olive oil
  • 2 cloves of garlic minced
  • 1/2 teaspoon of dried oregano
  • Salt and pepper to taste
  • 1 cup of fresh spinach leaves
  • 1/4 cup of sun-dried tomato aioli

Instructions:

Warm up the grill over medium-high heat

The zucchini, red bell pepper, and red onion should all be cleaned and cut into thick slices

Add the olive oil, minced garlic, dried oregano, salt, and pepper to a small bowl

Use a whisk to mix the ingredients together

The red bell pepper, zucchini, portobello mushrooms, and red onion slices should all be brushed with the balsamic mixture

The vegetables should be grilled for four to five minutes on each side, or until they are soft and have grill marks

Toast the whole-grain bread slices on the grill until they get a little brown color

Put a slice of Swiss cheese on top of each toasted piece of bread to make a sandwich

Then put some grilled vegetables on top of the cheese

Finally, add some fresh spinach leaves

Cover the vegetables with the sun-dried tomato aioli

Add another piece of toasted bread to the top of each sandwich

Do not press too hard on the sandwiches

Instead, cut them in half
