Cashew Quinoa Granola



It is made with quinoa, cashews, and honey for a bit of sweetness. It is crunchy and healthy. Great for a healthy breakfast or a snack that will fill you up.

Ingredients:

  • 2 cups quinoa, cooked
  • 1 cup rolled oats
  • 1/2 cup cashews, chopped
  • 1/4 cup honey
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries

Instructions:

Preheat oven to 325F 163C

In a large bowl, combine cooked quinoa, rolled oats, chopped cashews, honey, melted coconut oil, vanilla extract, cinnamon, and salt

Mix well until evenly coated

Spread the mixture onto a lined baking sheet in an even layer

Bake in the preheated oven for 20-25 minutes or until golden brown, stirring halfway through to ensure even baking

Remove from the oven and let it cool completely

Once cooled, stir in dried cranberries

Store in an airtight container

Serve with yogurt, milk, or enjoy as a snack
