Paleo Chicken Salad
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 cups mixed greens e

- , spinach, arugula, kale
- 1/2 cucumber, sliced
- 1/2 red bell pepper, diced
- 1/4 red onion, thinly sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup sliced almonds
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
Season the chicken breasts with salt and pepper
Heat 1 tablespoon of olive oil in a skillet over medium-high heat
Cook the chicken breasts for about 6-8 minutes per side, or until cooked through and no longer pink in the center
Remove from heat and let them rest for a few minutes
In a small bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to create the dressing
Slice the cooked chicken into thin strips
In a large salad bowl, combine the mixed greens, cucumber, red bell pepper, red onion, cherry tomatoes, and sliced almonds
Add the sliced chicken on top of the salad
Drizzle the dressing over the salad and toss to combine all the ingredients
Serve immediately and enjoy your delicious Paleo Chicken Salad!
