Polish Kielbasa And Sauerkraut Soup
You can taste the rich flavor of Polish kielbasa in this hearty and flavorful soup made with sauerkraut. Great for a meal that makes you feel better, especially on cold days.
Ingredients:
- 1 lb Polish kielbasa, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can 14 oz sauerkraut, drained and rinsed
- 4 cups chicken broth
- 1 cup diced potatoes
- 1 cup shredded cabbage
- 1 bay leaf
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add sliced kielbasa and saut until browned
Add chopped onions and minced garlic, saut until onions are translucent
Stir in sauerkraut, diced potatoes, shredded cabbage, bay leaf, and caraway seeds
Pour in chicken broth, season with salt and pepper to taste
Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender
Remove bay leaf before serving
Garnish with chopped fresh parsley
Serve hot and enjoy!
