Gluten-Free Lemon Dill Egg Salad
A tasty and refreshing egg salad with a lemon and dill twist that is great for a gluten-free snack or meal.
Ingredients:
- 6 hard-boiled eggs, chopped
- 1/4 cup mayonnaise gluten-free
- 1 tablespoon Dijon mustard gluten-free
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh dill
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 stalk celery, finely chopped
- 2 green onions, thinly sliced
Instructions:
In a mixing bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, lemon juice, chopped dill, salt, and black pepper
Mix until well combined and creamy
Fold in the chopped celery and sliced green onions
Refrigerate for at least 30 minutes to allow the flavors to meld
Serve chilled and enjoy!
