Grilled Chicken Fresco Soft Tacos
These Grilled Chicken Fresco Soft Tacos are a fresh and flavorful twist on traditional tacos. The grilled chicken is seasoned to perfection, and when combined with the fresh toppings and a squeeze of lime, it creates a delicious meal for any occasion.
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 tsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 8 small soft taco tortillas
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1/2 cup crumbled queso fresco cheese
- 1/4 cup sour cream
- 1 lime, cut into wedges
Instructions:
Warm the grill up to a medium-high level
Add chili powder, cumin, salt, and pepper to a small bowl
Mix them together to make a marinade
Use a brush to cover the chicken breasts with the marinade
Grill the chicken for six to eight minutes on each side, or until it's fully cooked
Take it off the grill and give it a minute or two to rest
Cut the chicken into very thin strips
For about 20 seconds on each side, warm the tortillas up on the grill
Put chicken strips in the middle of each tortilla to make the tacos
Put fresh queso cheese, diced tomatoes, red onion, and cilantro on top
Put sour cream on top and squeeze lime juice on top of that
Cut the tortillas in half and serve right away
