Vegan Medjool Date Peanut Butter Eggs
Medjool dates are sweet, and these vegan Medjool Date Peanut Butter Eggs are a delicious treat. They have peanut butter, cocoa powder, and dates. They are a great way to satisfy your sweet tooth without eating too much.
Ingredients:
- 1 cup Medjool dates, pitted
- 1/2 cup peanut butter
- 1/4 cup shredded coconut optional
- 1/4 cup cocoa powder
- 2 tablespoons maple syrup optional
- Pinch of salt
Instructions:
Melt peanut butter, Medjool dates, cocoa powder, maple syrup, and a pinch of salt in a food processor
Add shredded coconut if using, and blend until a sticky dough forms
Roll out small pieces of dough into the shape of an egg
Put the egg shapes on a baking sheet that has parchment paper on it
Put the eggs in the fridge for 30 minutes to make them firm
